Paleo Chocolate Chip Cookies

Sometimes you just need something sweet – right?!  And in those moments, you want that sweet something fast!  You know I’m right.  That’s how I came up with this quick little recipe.  In a moment of total sweet tooth desperation I threw these ingredients together and discovered the most delectable little morsels that take just 20 minutes from preparation to hot from the oven.  Awww yeah, that’s what I’m talking about!

The Directions:
2 bananas mashed 
3/4 cup of almond meal/flour (I like Bob’s Red Mill.)
1/4 of a bag of Chatfield’s double dark semi-sweet chips (these are dairy, nut and soy free)
a dash of cinnamon (I don’t like measuring unless I have to)
a splash of vanilla

The prep work takes about 5 minutes.

Set your oven to 350 and scoop the batter onto a baking sheet lined with parchment paper.  This recipe makes about 12 cookies.  Bake them for about 15 minutes (they’ll be slightly brown on top).  They’re best when eaten while they’re still warm!

They have a bit more of a muffin type consistency than a typical chocolate chip cookie.  I think that’s one of the reasons I love them so much.  They really are a nice little treat that I never feel guilty about indulging in, and I love how super fast they are to make.

They are a great paleo treat  – gluten free, grain free, dairy free and they’re also egg free!

  • I would love to hear you talk about just how you get started going paleo, what did you read to prep yourself and become accustomed and how did your kids adjust? My worst fear is taking the leap but having to cook two meals, one for me and hubs and one for kids. SO wouldn't do that! 🙂

  • Yum! These look so good! Where do you buy your almond flour (and other specialty ingredients)? We just started trying some paleo recipes at supper – the meal plan I subscribe to had two recipes this week called for almond flour and when I picked it up at Publix it was over $12 for 16 oz – gulp! I debated whether or not to even get it, but I bit the bullet and the oven fried chicken I made with it was very good. Just curious if the price varies much at other stores. I'd love to try more recipes with it (like these cookies!)

  • Whole Foods – but Kroger also carries it and Trader Joe's has an almond meal that's a little coarser. You can always make your own with blanched almonds and a food processor.

  • Hmm… banana as the binding agent, I'll have to try that! My kid is allergic to nuts and eggs, so I'll probably try using flour or some flour mix.

  • This recipe looks delicious! I'll be trying it this weekend for sure. Hope I'm not too late to add another Paleo question(s) to the list. How would you suggest we go about transitioning the whole family to a Paleo lifestyle? And how do you monitor what your children eat outside of the home (school lunch, friends' houses, etc.)?
