Treat Your Taste Buds with Quinoa

I’m not a great cook.  We all have our strengths.  Cooking is not one of mine.  Enter my real life friend who recently started a blog and can cook her tail off – Donna, aka tarheelmom.  I’ve mentioned her awesomeness before when I shared how thankful I am for her baked macaroni.   Last night, I tried another one of her recipes, and to say it was a home run is an understatement.  I made her quinoa with roasted garlic and tomatoes.

I added a little arugula as a garnish because I’m all fancy like that.

Yeah, that’s right – I roasted my own garlic – thanks to Donna for showing me how.  It was Delish – yes, it deserves a capital D!  It was a great stand alone dish, although the kids had a chicken breast with their portion.  My kids aren’t tomato lovers yet (I hope someday), so I just served theirs before I added the tomatoes.  I just had to share this with you because it was such a simple dish to prepare, and it definitely packed a flavorful punch not to mention it’s actually good for you.

Have you tried any recipes with quinoa (pronounced keen- wha)?  It’s such a great, healthy alternative to rice, and I’m learning that you can do so much with it!  I’m a big fan of healthy food that tastes like a treat for your taste buds.

  • That looks so yummy {LOVE THE BOWL}. We are huge quinoa eaters over here. In fact so much so that when I dropped my phone in coffee there wasn't any rice in the house so I placed it in quinoa to dry out. Don't ever do that by the way. It's too tiny and jams the phone! But we still love our quinoa 😉

  • Your pics have sold me on this particular dish and the red wine certainly helps 🙂 Quinoa is a staple in my pantry. Thank you for sharing this recipe – love roasted garlic with tomatoes. WE have still some ways to go with tomatoes other than ketchup – one kid cannot get enough and one kid will not eat it – not yet, anyway. Pretty bowl!

  • Funny — I just cooked my first quinoa (which I never knew how to pronounce 🙂 last week and it was great. I don't know why it was so intimidating to me before, but it's really great.

  • It's like you read my mind! I have a ton of quinoa from Whole Foods & had no idea what to do w/ it. Also, am I the only one who pronounced it "kuh-noah" for the longest time? HA!

  • Yum, this recipe looks delicious. I love quinoa. I started eating it last year. I use it in place of rice and couscous. One of my favorite recipes with quinoa is quinoa stuffed peppers…they are incredible. Loving your ikat bowls too. I was just at World Market, but didn't see those, bummer.

  • Just tried quinoa for the first time in a mac-and-cheese-esque recipe I pulled out of the back of a magazine. Delicious!

  • I love quinoa. I used it any time a recipe calls for rice. My favorite quinoa dinner is a "taco salad". I line the plate with whatever salad greens i've got on hand, and then top with quinoa. On top, I layer black beans, salsa, cheese and avocado. I finish it with a dollop of plain Greek yogurt. So good!
