Paleo Brownie Pie

As you already know my family and I have been gluten free since last August, and we made the jump to paleo in January.  I know a lot of people refer to it as a diet, but it certainly doesn’t feel like I’m dieting.  Does this look like diet food to you?

I don’t eat treats like this all the time, but it is nice to be able to indulge my sweet tooth from time to time and still stay true to the paleo lifestyle.  
I found this recipe for flourless brownies at Homemade Mommy and made a couple tweaks to create this delicious paleo brownie pie.  My chocolate-loving son is a major fan and has requested that I make this pie for his birthday. 
Ingredients: 
4 eggs
1 cup unsweetened cocoa powder
3/4 cup raw honey 
3 tbsp coconut oil 
2 tsp vanilla
pinch of salt
Directions: 
Preheat oven to 350.  Combine all the ingredients (melt the coconut oil before adding to your mixture).  Lightly grease a pie pan with coconut oil.  Pour batter into the pan and bake for about 30 minutes.  Let it cool completely before frosting. 
The frosting recipe I used is from the Paleo Baking Company.  For this brownie pie, I half the recipe.  Otherwise, you have a lot of leftover frosting.  This frosting is so good!  I could literally spoon it into my mouth  – no lie.

The combination of the brownie pie and this frosting is off the charts delish!  This pie is perfect for the serious chocolate lover!  I typically give half of it away so I don’t over-indulge.  ðŸ˜‰

The paleo life has been really good to me, and I’m excited to share more about my journey in the weeks to come.  I’ve never felt better – and I’ve never fed my body so well either.  I look at food in a whole new way now, and I’ve truly fallen in love with cooking and baking.  

And for those of you that aren’t gluten free, diary free or paleo  – this recipe is a great one for those times when you really want a little something sweet but you’re out of milk and flour!

  • I missed the post about Paleo. I didnt know that. My 21 month old son has major food allergies. Because of them, we've cut out a lot of things – diary, eggs, gluten, peanuts, soy and corn are the major ones. I have to say, it's been challenging to say the least but I have found some wonderful recipes along the way. Thanks the brownie recipe. With an egg substitute it can work us! Yay for brownies!!!!

  • How the heck do you give half your dessert away?? You have some control! I would be stabbing any hand that came near my plate try to take my dessert :-). This looks good, I love the ingredients, but I don't eat eggs or honey, I am going to try to make this with egg replacer and agave syrup instead and see if I can veganize this.

  • I made this tonight and I used almond butter instead of honey. I am trying to avoid the sugar as much as possible. Is there a reason for the honey other than sweetness? The batter was so thick that I had to spoon it into the dish and smoosh/spread it. After the mix I decided at last minute to add crushed almonds and coconut into it. I figured since it was so thick already, what would a few more ingredients hurt. I will post a reply to taste and texture once it is out of the oven. About 5 more minutes, smells amazing.

  • Ok, so the brownies came out very bitter. Which makes sense because of the cocoa powder. I am thinking I should have used honey in the mix to bring out the sweetness. I think had I done that then these would be A OK. I have only been doing Paleo for 7 weeks, trial and error have to happen. I know now that the Honey was for the sweet taste and maybe even thin out the mixture a bit. Honey is just so high in sugar. Natural or not, it's still sugar. Definitely a great recipe if you follow it. I like to wander a bit.

  • Thanks so much for sharing your experience! Sometimes bananas work in place of honey to add sweetness without adding too much thickness. Next time maybe try adding 1 banana and half the honey the recipe calls for? I might try that myself.

  • I made a few tweaks to the recipe: I used 1/4c. plus 1T of Honey (didn't have enough), 1 mashed banana and a pinch of salt. Baked for 25min and it turned out pretty good! Next time, I think I'll reduce the baking time to 20 minutes and add in another mashed banana (if I don't have enough honey again). My finished product was a little dry and spongy, and because I only used 1/4c. of honey and 1 mashed banana, it wasn't very sweet. BUT- I like bitter chocolate, so it definitely is a good treat to satisfy a sweet tooth! I can see how adding frosting would just make this PHENOMENAL!

  • Mine are baking right now. I lost track of time and forgot to set the timer. Any suggestions on how to tell that they're done? They look done on the outside, but when I did the fork in the middle, it came out gooey. (I wouldn't mind, but my family might!) Tastes, delish, btw!

  • Just needed you to know that I made this brownie cake tonight as a late Easter treat for my boyfriend and I, who celebrated our first 30 days with paleo on Friday. I am SO glad I kept this recipe! It was f-ing amazing! I didn't make the frosting (my bf has his reservations about coconut oil in abundance) but I did serve it with some coconut whipped cream. A-M-A-Z-I-N-G.

  • Hi i JUST TRIED THIS RECIPE TODAY AND IT IS DEFINITELY FOR CHOCOLATE LOVERS LOL THE COCOA IS SO STRONG AND BITTER BUT i ADDED SOME FRESH STRAWBERRIES ON TOP TO GIVE IT SOME SWEETNESS, THANKS FOR THE SIMPLE RECIPE 🙂

Our taste is the same in decorating and becoming Paleo girls. I myself have been suffering with the same symptoms as you, found Paleo, and switched and I have never felt better. I too look at food in a whole different light now and love to prep,shop and cook everyday. My children have really benefited also.   • I am on a low glycemic diet so I have to stay away from honey and my husband can tell when I use bananas instead of sugar…any ideas on any other ways to sweeten this up?

  • Looks yummy, I'm a low glycemic diet person but I've been told honey is ok in moderation … think that might be the key, eat a small piece not the entire recipe 😉

    For the coconut oil, is it the refined or unrefined oil? Does that matter? I've only used coconut oil sparingly but purchased a jar of each version yesterday, so this is definitely a learning opportunity for me. Thanks! Robin

  • Just found this via Pinterest tonight & I couldn't whip this recipe up fast enough. LOL I only made 1/4 of the frosting recipe you linked and that's still more than enough. But obviously, since it's chocolate, the leftover won't go to waste. 😉 The brownies were super quick & easy to make & quite tasty. Thanks for sharing!
