Quick Paleo Breakfasts (Freezer Meals)

I’m not a morning person.  Waking up before 8 am is painful.  But waking up at 6:30 am to get 2 kids dressed and ready for school and making them a healthy breakfast is full on torture.  It’s not that I don’t want to feed my kids a good healthy breakfast or that I don’t like to cook.  But doing it that early in the morning is rough.  Before we were paleo peeps I was the queen of the toaster waffle with peanut butter, but that isn’t going to cut it in the paleo world.  So, I had to rethink breakfast.  At first I tried to force myself to be a morning person.  I tried waking up even earlier to prepare a fresh breakfast of something like scrambled eggs, pumpkin pancakes and sausage.  That didn’t last long because once again – I’m just not a morning person.  
I decided instead of trying to change that about myself that I would work smarter not harder.  So about once every two weeks on a Saturday or Sunday morning when I can leisurely start my day at a reasonable hour I make two weeks worth of breakfast meals and freeze them.  Then Monday through Friday it’s virtually as simple as popping a waffle in the toaster as I pull out a bag and reheat!

It’s so simple.  I have no idea why I didn’t think to do this sooner!  I basically take some type of meat (usually ground) and cook it with a shredded veggie.  Combinations we like  – chorizo with sweet potato – ground pork or lamb with zucchini or yellow squash or carrots.

I cook the meat and then add the shredded veggies  – sprinkle a little salt and pepper – maybe a little garlic powder and boom – it’s done. Then I put it into freezer bags- just enough for one days breakfast.  When it’s time to reheat I can either microwave the contents or reheat on the stove  – sometimes (not every day) I scramble an egg or two in while I’m reheating on the stove or I fry an egg.  It’s also easy to add a little fresh fruit on the side as well.

The combinations are endless, so get creative!  For all my mom friends – the power of the sneaky shredded veggie is amazing!  My kids eat their veggies for breakfast every morning without complaint.  Shredding them sneaks them in without my kids really even noticing.

These meals will keep in the freezer for up to 2 weeks.  Make sure you use a freezer bag or some other type of container that is made for use in a freezer.

It’s hard to think of quick grain free – dairy free breakfast options, so freezing these meals has been a major life saver for me!  I wish I had thought to do this sooner.

  • I'm a sandwich in the morning person, so when I went low carb, I missed that each morning. I found a great recipe for nut and seed crackers. I make one portion once a week and it keeps in a ziploc bag all week. Mine are a recipe by Dr Hexenberg:

    0.25oz almonds/nuts
    1 1/4 cup raw sunflower seeds (no husks)
    1/2 cup flax seeds
    1/2 cup sesame seeds
    2 tablespoons psyllium husk
    1 teaspoon salt
    2 and a dash cups of water

    Grind almonds/nuts to a fine flour. Mix all the ingredients in a bowl, add water and let swell for 10 minutes. Heat the oven to 320 F. Spread out the dough on a parchment covered pan and use a pizza cutter or knife to score the dough. Bake in the oven for 70 minutes. You may have to do it in two batches.

  • Reading all of your posts about eating Paleo has me really thinking about giving it a try.

    But today's post makes me wonder…. what about all the fat and cholesterol found in stuff like chorizo and ground meat? Not criticizing your choices… just wondering how you balance out those issues… especially for someone like me who has to watch their cholesterol. Is the majority of this way of eating meat based?

  • Nutrition is definitely not a one size fits all as we are all different – we have different pre-dispositions and health issues. I certainly do not eat sausage or bacon every day – I eat lots of fish as well as lots and lots of veggies. I don't eat eggs every day either.     And if you google paleo and cholesterol you will find tons and tons of information! (It's a rabbit hole!)

    You should talk to your doctor and do some research to see if this lifestyle would be beneficial for you. In my experience, I was eating relatively healthy for years and wasn't able to lose weight and was always tired. Eating paleo since January and I'm down 12 -15 pounds and have never felt better – but everyone is different and what works for one may not work for someone else.

    Feel free to ask me any questions – I'm certainly not an "expert" but I'll try to at least send you to right people 😉 And I don't take it as criticism at all. It's smart to be skeptical and ask lots of questions!

  • What a good idea! I do sort of the same deal… but without the freezing. I roast whatever veggies we are going to have wiht our breakfast, enough for a week. I cook the meat as well. Then in the mornings, I just thrown the veggies, meat, and egg in a skillet with coconut oil and breakies is done in less than 10 minutes. Love it!

  • Great idea for breakfast. We are not paleo eaters but are looking into eating healthier and phasing out cereal for good. This looks delicious and will try it out for sure.

  • This is such a great idea! My kids would love it – they enjoy spice and garlic and would be beyond satisfied with this particular on days when my 15-yr-old wakes up at 5 a.m. to study and could use a hot breakfast. Thanks, Carmel!

    You may have already addressed this, but I was wondering if you and your family experienced a rough detox period when you started paleo?? My "before" sounds a lot like yours, and I'm ready to make the paleo commitment so hopefully I can have a similar "after" experience. But reading about the detox from lots of people has me not super excited to jump in…

  • Good idea. You can also make mini fritatas in a muffin pan. I did that when my husband and I did the Whole 30 this year.

  • These recipes sound fantastic whether you're following the paleo diet or not! Also I totally agree about shredding veggies for the kids (or pureeing them). I sneak a bit of spinach into my kids' smoothies all the time, and also put all sorts of "gross" things into our red sauce and they have no idea (mwah ha ha ha!!!!!! Evil mother.)

  • I think your friday ideas post went out on the feed prematurely, but I wanted to tell you that you should try an audio version of GOT if you want to read and paint simultaneously! I check out audio books from the library all the time. 🙂

  • I'm finding lots of these "paleo" diet plans are lacking in one very specific aspect: VINEGAR. Naturally fermented items like pickles, sauerkraut, and even regular vinegar are absolutely vital to keep from getting cholesterol poisoning. They also keep your digestive system healthy, and help break down all the extra meat you're eating.
    At the very least you can eat extra fresh pineapple which has a similar effect.

  • Every paleo diet plan I've ever looked at includes a very healthy dose of fermented foods. Wonder what plans you're looking at? I think the best instructions for making sauerkraut are in the Practical Paleo cookbook.

  • So happy I stumbled across this-have been looking for more breakfast options as I have ME/CFS and have limited energy, but working an active job need a good brekkie to get me going in the morning. I am definitely going to try this, may do a sausage bake as well as the chorizo and sweet potato option!

  • I would love to eat healthier, but am not a big fan of meat OR fish and especially not for breakfast. Eggs come back on me for hours. So I feel stuck in the cereal category so choose stone ground oatmeal or quinoa. Where might I find other others that may not be best but passable?

  • I don't at the moment but maybe I can put some together as a number of readers have asked for this. Most of the times with breakfast meals I sort of just wing it – basically throwing together whatever we have and adding some spices for flavor. I'll work on putting some real deal recipes together to help you out!
