paleo eggnog

The one thing I miss about my life before paleo is dairy.  I’m not going to lie saying goodbye to dairy was hard.  Sometimes I cheat, but I always end up paying the consequences if I go overboard.  Headaches and skin issues are no bueno, so for the most part I just say no to dairy.  And I’ve become fast friends with coconut milk.  When one door closes…..another one opens.  Ha!

Because eggnog is one of my favorite holiday traditions and because I just can’t imagine a Christmas without it I replaced the milk, cream and sugar in my old eggnog recipe with coconut milk and coconut crystals…………and maybe I’m crazy, but I seriously like this version even better! 
paleo eggnog

Paleo Eggnog Recipe:

Ingredients:
3 egg yolks 
2 cups Natural Value Coconut Milk (this is the brand I like – but you use whatever brand of full fat canned coconut milk you like
2 tbs Coconut Crystals or coconut sugar
1 tbs vanilla extract
1 tsp nutmeg
1/2 tsp cinnamon
1 tbs honey

Instructions:
Whisk egg yolks until they lighten in color.  Mix in the coconut crystals slowly.  Then add the coconut milk, the vanilla extract and the spices – mix all together.  Next, heat the mixture in a saucepan over medium low heat.  Add 1 tbs of honey to the mixture on the stove.  The honey will start to melt into the mixture as it heats up.  You want to stir frequently and allow it to thicken.  Be careful not to rush the thickening process or you’ll end up with scrambled egg nog.  When it coats a spoon the mixture is done.  Let it cool before refrigerating.

Be especially merry and spike it, or drink it as is.  It also makes for a wonderful coffee creamer!  And it pairs quite nicely with my paleo chocolate chip biscotti – enjoy!

  • made this last night with my daughter…it was really good and the whole family loved it! Tastes different from traditional egg nog of course but I actually like it better…not as sweet.
