Our Fifth House - Paleo I love U Valentine Cookies
So, following the paleo diet is pretty simple and easy…………..until a holiday like Valentine’s Day rolls around and you find yourself surrounded by pink sprinkled donuts and sugar cookies.  I think paleo treats are really yummy, but they don’t always look as great when compared to other non paleo baked goodies do they?  So I set out to create a cute looking paleo treat for my three loves using my go-to chocolate chip cookie recipe.  My kiddos and my hub really loved how these turned out which made the small amount of extra effort to shape the cookies and add a special message worthwhile. 
Ingredients:
1 1/4 cup of almond flour
1 cup of arrowroot flour divided
1/2 tsp baking soda
1 egg 
4 tbs grass fed butter melted or coconut oil
1/4 cup raw honey
1/2 tsp vanilla

Directions: 
Mix the almond flour, 1/2 cup of arrowroot flour and baking soda together in a bowl.  In a separate small bowl whisk the egg with melted butter, honey and vanilla.  Add the wet ingredients to the flour mixture then add another 1/2 cup of arrowroot flour.  Now refrigerate the dough in the bowl for about 15 to 20 minutes so that you can form the cookies into heart shapes with your hands.  If the dough starts to get too sticky while you’re forming the cookies just stick the dough back in the refrigerator to allow it to harden up again.  Place them on a sheet of parchment paper.  Use the Enjoy Life Mega Chunks to form an I and a U.  Then bake at 350 for 10 to 15 minutes.

They’re best when eaten warm from the oven!  Crispy on the outside with a soft middle and the perfect amount of chocolate.
