garlic rosemary sweet potatoes

I can hardly believe October is almost over!   Seriously?!  I see the Christmas decorations in stores, and it just seems crazy that it’s already that time of year again.  For me it’s a toss up as far what I love the most about the holidays.  I love the decorating, but I also really really love all the yummy food!  That being said, I don’t love to spend all day in the kitchen.  I love simple dishes that are deliciously satisfying but don’t take too much time prepare.  These roasted garlic and rosemary sweet potatoes are ridiculously easy to make and I guarantee there will not be any leftovers……….people will be fighting for the last spoonful!  They would be a great Thanksgiving day side dish but would also be wonderful on a Christmas morning breakfast buffet……..it’s a versatile dish that could be enjoyed any time of day!

The really great thing about this sweet potato dish is that you don’t have to peel the potatoes!  Woohoo! I really dislike the chore of peeling potatoes…….but if you want to peel yours – have at it.    
Ingredients: 
– 3 medium sized sweet potatoes
– 5 to 6 cloves of garlic 
– 2 to 3 stems of rosemary
– 1/4 cup of melted coconut oil
– salt to taste
Directions: 
Preheat your oven to 350.  Wash, scrub and cube your sweet potatoes.  Chop your garlic and rosemary.  Put your cubed sweet potatoes in a large mixing bowl and add the chopped garlic and rosemary, then add the melted coconut oil.

Mix all together until every sweet potato is covered.  Cover a baking pan with parchment paper and lay your sweet potatoes out evenly.  Salt lightly over the pan.  Pop it in the oven for about 25 to 30 minutes.   Serve in a bowl – eat and enjoy

I know it’s not even Halloween yet, but just for fun – what’s your favorite Thanksgiving side dish?  I live for sweet potatoes……and I even love sweet potato pie a little bit more than pumpkin!  Oh my goodness……..is that a sin or what?!
