Brussel Sprout Salad

Ingredients
  

  • 4 to 5 garlic cloves chopped or minced
  • 2 cups shredded brussel sprouts
  • 1/4 cup olive oil
  • 1/2 cup shredded asiago cheese
  • 1/4 cup pine nuts
  • squeeze of fresh lemon juice
  • salt and black pepper to taste

Method
 

  1. Preheat the oven to 375 degrees. 
  2.  In a bowl mix together the brussel sprouts, olive oil and garlic. Pour on a baking sheet, being careful not to overload the sheet.
  3. Bake for 15 to 20 minutes, until the brussel sprouts are slightly browned and the smaller pieces look crispy. 
  4. Add the cooked brussel sprouts to a salad bowl, and add the cheese and pine nuts. 
  5. Squeeze a little fresh lemon juice and mix together.  Salt and pepper to taste.  
  6. Serve warm or chilled.
