gluten free biscotti

Gluten-Free Biscotti

Prep time 15 minutes. Bake time 30 minutes.

Ingredients
  

  • 1 3/4 cup blanched almond flour
  • 2/3 cup sugar I prefer coconut sugar, but white/raw sugar works too.
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 tbsp melted coconut oil or melted butter
  • 1/2 tsp vanilla extract or almond extract if you prefer

Method
 

  1. Preheat oven to 350.
  2. Mix the dry ingredients together in a large bowl. And then mix in the wet ingredients.
  3. Line a baking sheet with parchment paper and use hands to form a 1/2 inch thick dough loaf in the center.
  4. Bake until lightly browned. Then remove from oven and let cool completely.
  5. Once completely cool, slice into strips and turn each cookie on its side and bake at 250 for another 5 to 10 minutes.
  6. Turn oven off and leave the pan in the oven while its cooling down. This allows the biscotti to crisp for that perfect crunch!
  7. Once the oven is completely cold, pull the sheet out of the oven.
  8. Now you can serve them as it, or you can have some fun dressing up your biscotti. Drizzle or dip them in dark chocolate, and/or sprinkle with crushed almonds.....get creative!
