Gluten-free friends, now you can have your pumpkin spice and your biscotti too! 😉 This gluten-free biscotti is so easy to make and is the perfect addition to your morning coffee as we head into the holiday season!

I’m not a big breakfast person, and I typically don’t eat anything with my coffee in the morning. But there is just something about pumpkin-flavored coffee that makes me crave a little treat. And I love me a dunkable treat…..brings me back to my after-school oreo dunking in milk days……back before I even knew what gluten was…….but I digress.
You don’t have to be an expert baker to make this gluten-free biscotti….ask me how I know. 😉 There are a couple of steps to follow, so it’s somewhat of a process. But it’s pretty straightforward, and the results are delicious!

Gluten-Free Biscotti
Ingredients
- 1 3/4 cup blanched almond flour
- 2/3 cup sugar I prefer coconut sugar, but white/raw sugar works too.
- 1 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1 tbsp melted coconut oil or melted butter
- 1/2 tsp vanilla extract or almond extract if you prefer
Instructions
- Preheat oven to 350.
- Mix the dry ingredients together in a large bowl. And then mix in the wet ingredients.
- Line a baking sheet with parchment paper and use hands to form a 1/2 inch thick dough loaf in the center.
- Bake until lightly browned. Then remove from oven and let cool completely.
- Once completely cool, slice into strips and turn each cookie on its side and bake at 250 for another 5 to 10 minutes.
- Turn oven off and leave the pan in the oven while its cooling down. This allows the biscotti to crisp for that perfect crunch!
- Once the oven is completely cold, pull the sheet out of the oven.
- Now you can serve them as it, or you can have some fun dressing up your biscotti. Drizzle or dip them in dark chocolate, and/or sprinkle with crushed almonds…..get creative!
